Ingredients

  • 4 large tortillas
  • 6 eggs beaten
  • 1 cup shredded cheese
  • 1 cup cooked sausage crumbled
  • 1 cup diced bell peppers
  • 1 cup diced onions

Instructions 

  1. 1. In a skillet, cook the sausage until browned. Remove and set aside.
  2. 2. In the same skillet, sauté the bell peppers and onions until soft.
  3. 3. Add the beaten eggs to the skillet and scramble until cooked through.
  4. 4. Mix in the cooked sausage, bell peppers, and onions with the scrambled eggs.
  5. 5. Place a portion of the egg mixture onto each tortilla, sprinkle with cheese, and roll up the burritos.
  6. 6. Wrap each burrito in foil and place in freezer bags. Freeze until ready to eat.
  7. 7. To reheat, remove foil and microwave for 2-3 minutes or until heated through.
