Ingredients

  • 1 large Eggplant sliced
  • 4 slices Bread toasted
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Lettuce shredded
  • 1 large Tomato sliced
  • ½ cup Mayonnaise

Instructions 

  1. 1. Slice the eggplant into ¼ inch thick rounds.
  2. 2. Heat olive oil in a pan over medium heat.
  3. 3. Cook the eggplant slices until golden brown on both sides, about 5 minutes per side.
  4. 4. Season the eggplant slices with salt and pepper.
  5. 5. Toast the bread slices.
  6. 6. Spread mayonnaise on one side of each bread slice.
  7. 7. Assemble the sandwich by layering eggplant slices, lettuce, and tomato between two slices of bread.
  8. 8. Serve immediately and enjoy!
