Ingredients

  • 1 lb Crabmeat fresh or canned
  • 2 cups Heavy Cream
  • 1 cup Chicken Broth
  • 1 tablespoon Butter
  • 1 tablespoon Flour
  • 1 small Onion chopped
  • 1 clove Garlic minced
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. 2. Stir in the flour and cook for another minute, stirring constantly.
  3. 3. Gradually add the chicken broth, stirring constantly to avoid lumps. Bring to a simmer.
  4. 4. Add the heavy cream and bring to a gentle simmer. Cook for about 10 minutes, stirring occasionally.
  5. 5. Add the crabmeat, salt, and black pepper. Cook for another 5 minutes.
  6. 6. Use a blender to puree the soup until smooth. Strain through a fine mesh strainer if desired.
  7. 7. Serve hot, garnished with a sprinkle of fresh herbs if desired.
