- 4 cups Chicken broth
- 1 cup Milk
- 2 cups Shredded cheddar cheese
- ¼ cup Butter
- ¼ cup All-purpose flour
- 1 cup Chopped onions
- 1 teaspoon Salt
- ½ teaspoon Black pepper
Melt the butter in a large pot over medium heat.
Add the chopped onions and cook until they are soft and translucent.
Stir in the flour and cook for about 1 minute.
Gradually whisk in the chicken broth and bring to a boil.
Reduce the heat and simmer for about 10 minutes.
Add the milk and shredded cheddar cheese, stirring until the cheese is melted and the soup is smooth.
Season with salt and black pepper to taste.
Serve hot with a sprinkle of extra cheddar cheese on top if desired.
