- 4 cups shredded carrots
- 1 cup raisins
- ½ cup mayonnaise
- 2 tablespoons lemon juice
- 1 pinch salt
In a large mixing bowl, combine shredded carrots and raisins.
In a small bowl, mix mayonnaise, lemon juice, and salt until well combined.
Pour the dressing over the carrot and raisin mixture. Toss to coat evenly.
Chill in the refrigerator for at least 30 minutes before serving.
