  • 4 large Carrots peeled and thinly sliced
  • 1 Red Onion thinly sliced
  • 1 Jalapeño seeded and finely chopped
  • ¼ cup Cilantro chopped
  • ¼ cup Lime Juice freshly squeezed
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. In a large mixing bowl, combine the sliced carrots, red onion, and jalapeño.
  2. 2. Add the chopped cilantro, lime juice, olive oil, salt, and black pepper.
  3. 3. Toss everything together until well combined.
  4. 4. Let it sit for at least 5 minutes to allow the flavors to meld.
