Ingredients 

Main Ingredients

  • 1 lb Fish fillets (snapper or any white fish)
  • 1 cup Coconut milk
  • 2 cups Fish stock
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Bell pepper, chopped
  • 2 Carrots, sliced
  • 1 Potato, diced
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 Lime, juiced
  • 2 tablespoon Cilantro, chopped

Instructions 

  1. 1. Heat a large pot over medium heat. Add a bit of oil and sauté the onions, garlic, and bell pepper until softened.
  2. 2. Add the carrots, potato, thyme, salt, and black pepper. Cook for another 5 minutes.
  3. 3. Pour in the fish stock and coconut milk. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes.
  4. 4. Add the fish fillets and cook until the fish is done, about 10 minutes.
  5. 5. Stir in the lime juice and cilantro. Adjust seasoning if needed.
  6. 6. Serve hot and enjoy!
