Canadian Yellow Split Pea Soup with Ham Recipe

- 2 cups yellow split peas rinsed and drained
- 1 large onion chopped
- 2 cloves garlic minced
- 2 cups ham diced
- 8 cups chicken broth
- 2 cups carrots sliced
- 2 cups celery sliced
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
1. In a large pot, sauté the onion and garlic until softened.
2. Add the ham and cook for a few more minutes.
3. Stir in the yellow split peas, carrots, celery, chicken broth, thyme, black pepper, and bay leaves.
4. Bring to a boil, then reduce heat and simmer for about 2 hours, or until peas are tender.
5. Remove bay leaves before serving.
