California Grilled Veggie Sandwich
A delicious and healthy grilled veggie sandwich perfect for a light lunch or dinner.

Main Ingredients
- 1 large zucchini sliced
- 1 large red bell pepper sliced
- 1 large yellow bell pepper sliced
- 1 medium red onion sliced
- 4 slices whole grain bread
- 4 tablespoon hummus
- 2 tablespoon olive oil
- to taste salt
- to taste black pepper
1. Preheat your grill to medium-high heat.
2. Brush the zucchini, bell peppers, and onion slices with olive oil and season with salt and black pepper.
3. Grill the vegetables for about 4-5 minutes on each side until tender and slightly charred.
4. Toast the bread slices on the grill for about 1-2 minutes until lightly browned.
5. Spread hummus on each slice of toasted bread.
6. Layer the grilled vegetables on two slices of bread and top with the remaining slices.
7. Serve immediately and enjoy!
