Ingredients

  • 4 cups Beets, peeled and diced
  • 1 cup Carrots, diced
  • 1 cup Onions, chopped
  • 4 cups Vegetable Broth
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Lemon Juice
  • 0.5 cup Sour Cream for garnish
  • 2 tablespoon Fresh Dill, chopped for garnish

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat. Add the onions and garlic, and sauté until softened.
  2. 2. Add the beets, carrots, and vegetable broth. Bring to a boil, then reduce heat and simmer for about 30-35 minutes, or until the vegetables are tender.
  3. 3. Use a blender to puree the soup until smooth. Return to the pot and season with salt, pepper, and lemon juice.
  4. 4. Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
