Beef and Guinness Stew
A hearty and flavorful stew made with tender beef and rich Guinness beer.

Main Ingredients
- 2 lbs Beef chuck, cut into cubes
- 1 large Onion, chopped
- 2 cloves Garlic, minced
- 2 cups Carrots, sliced
- 2 cups Potatoes, diced
- 1 can Guinness beer
- 2 cups Beef broth
- 2 tablespoon Tomato paste
- 1 teaspoon Thyme
- 1 teaspoon Salt
- 1 teaspoon Black pepper
1. Heat a large pot over medium heat. Add a bit of oil and brown the beef cubes on all sides. Remove and set aside.
2. In the same pot, add the chopped onion and garlic. Cook until softened.
3. Add the carrots and potatoes. Cook for a few minutes.
4. Pour in the Guinness beer, beef broth, and tomato paste. Stir well.
5. Return the beef to the pot. Add thyme, salt, and black pepper. Bring to a boil.
6. Reduce heat to low, cover, and simmer for about 2.5 hours, or until the beef is tender.
7. Serve hot and enjoy!
