  • ½ cup sour cream
  • ¼ cup chopped green onions
  • ¼ cup chopped fresh parsley
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions

  2. 2. Bake the potatoes for about 45 minutes or until tender. Let them cool, then dice them.
  3. 3. In a large mixing bowl, combine the mayonnaise, sour cream, green onions, parsley, salt, and black pepper.
  4. 4. Add the diced potatoes to the bowl and mix until everything is well coated.
  5. 5. Chill in the refrigerator for at least 1 hour before serving.
