Main Ingredients
- 1 cup Cherry tomatoes, halved
- 1 cup Cucumber, sliced
- 1 cup Kalamata olives, pitted
- 1 cup Artichoke hearts, quartered
- ½ cup Roasted red peppers, sliced
- ½ cup Red onion, thinly sliced
- ½ cup Mozzarella balls
- ¼ cup Fresh basil, chopped
- ¼ cup Olive oil
- 2 tablespoon Red wine vinegar
- 1 teaspoon Dried oregano
- to taste Salt and pepper
1. In a large mixing bowl, combine cherry tomatoes, cucumber, olives, artichoke hearts, roasted red peppers, red onion, mozzarella balls, and fresh basil.
2. In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper.
3. Pour the dressing over the salad and toss gently to combine.
4. Serve immediately or refrigerate for up to 2 hours before serving.
