Ingredients 

Main Ingredients

  • 2 medium zucchini sliced thinly
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 large eggs beaten
  • to taste salt and pepper
  • as needed cooking spray

Instructions 

  1. Preheat your air fryer to 400°F (200°C).
  2. In a mixing bowl, combine breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
  3. Dip zucchini slices into beaten eggs, then coat with breadcrumb mixture.
  4. Place coated zucchini slices in a single layer in the air fryer basket. Spray lightly with cooking spray.
  5. Air fry for 10-15 minutes, until golden and crispy. Shake the basket halfway through cooking.
  6. Season with salt and pepper to taste. Serve immediately.
